Concept Design
This concept was designed for a steak and seafood restaurant along the waterfront. The design required 385 seats with full restaurant service. RM+ opted for an open concept for the space with seating on 2 levels, both overlooking the waterway. Outdoor seating was created along the water’s edge to enhance guest experience. Large wood columns set the tone of the interior space, as if one is looking through the trees at the water. Open kitchens and show kitchen allow the guests to participate.
Looking at various images that immediately register from “Steak & Seafood”, we developed an idea around the mixing of both types of food. A Fish and a Steak, furthermore we broke down the steak into images that relate to steaks, like farms, cowboys and the rancher style of life. For fish, imagery like fishing nets and the process of catching a fish seemed to register quickly. Mixing both we came up with the Fish Rodeo, combining both directions into one image. The restaurant’s concepts then became a combination of both worlds; the rancher and the fisherman.
Along the waterfront, all views focus on the waterway and parks. The restaurant is divided into a couple of zones, with an extension into the waterway for a “floating” bar area, show kitchen and limited upstairs terrace seating.
The design uses the positive and negative spaces of the fishing net or ranch fence to generate a unique look to the space. Looking through the net/fence, the guests see the park, waterways and the world outside.
